Sustainable culture, no herbicides. Partial grassing with mechanical working of the soil. High Environmental Value Level 3 certification.
Hand-picked grapes only, in crates of up to 30 kg. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 24 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts.
In French oak barrels for 10 months. 20% new barrels. Regular stirring of the lees.

Harvested by hand only, in openwork crates of 15 KG. The bunches are cooled and 100% destemmed before vatting in wooden vats for 2 weeks. Cold pre-fermentation maceration before alcoholic fermentation using indigenous yeasts. Gentle extraction by alternating manual punch downs and pump overs.
In French oak barrels for 12 months. 25% new barrels, then blended for 6 months in vats before bottling.
